INGREDIENTS:
500G CHICKEN THIGH OR BREAST
1 COS LETTUCE
2 TOMATOES, CHOPPED
1 GREEN CAPSICUM, DICED
1 RED CAPSICUM, DICED
1 CARROT, PEELED, AND PEELED SLICES
1 RED CHILLI
1/2 PINEAPPLE, CORED AND SLICED
METHOD:
1. HEAT A PAN ON THE STOVE AND PLACE CHICKEN FILLETS INTO THE PAN ONCE HOT.
2. CUT THE BASE OF THE COS LETTUCE AND BEGIN TO CAREFULLY PEEL OFF THE INDIVIDUAL LEAVES. RINSE LEAVES UNDER RUNNING WATER.
3. WHILE THE CHICKEN IS COOKING, DICE AND CHOP ALL VEGETABLES.
4. FLIP THE CHICKEN ONCE THERE IS A DARK GOLDEN COLOUR TO THE UNDERSIDE.
5. PLACE ALL THE SALAD INGREDIENTS ONTO A PLATTER, ALONG WITH THE WASHED AND DRIED LETTUCE LEAVES.
6. IN A SEPERATE PAN, BEGIN TO LIGHTLY GRILL THE PINEAPPLE SLICES FOR 2-3 MINS EACH SIDE.
7. ONCE CHICKEN IS COOKED THROUGH, TAKE IT OFF THE HEAT AND ONTO A CHOPPING BOARD TO REST FOR 4-5 MINS.
8. ONCE THE CHICKEN HAS SLIGHTLY COOLED, SLICE IT INTO EVEN PIECES THAT WILL WORK BEST FOR THE SIZE OF YOUR LETTUCE CUPS.
9. PLACE THE CHICKEN INTO A BOWL AND PLACE ONTO THE TABLE NEXT TO VEGETABLE PLATTER.
10. REMOVE PINEAPPLE FROM THE HEAT ALSO AND ADD TO PLATTER.
11. TO CONSTRUCT, SIMPLY GRAB YOURSELF A LETTUCE CUP AND BEGIN TO FILL IT WITH YOUR CHOSEN SELECTION OF VEGETABLES, MEAT, AND CHILLI.
12. YOU ALSO HAVE THE OPTION TO ADD SOME HOMEMADE HUMMUS, MANGO RELISH, OR ANY OTHER CONDIMENT.
