LAMINGTON PROTEIN CHUNKS

Ingredients:

  • 1 cup buckwheat

  • 1 cup raw cashews

  • 1/2 cup sultanas

  • 25g raw cacao powder

  • 90g chocolate protein powder of your choice (I used Cyborg Zero - dairy free)

  • 80g coconut oil

  • desiccated coconut (to coat)

 

Method:

  1. Pour the buckwheat, cashews and sultanas into a bowl, and cover with boiling water. Allow to soak for at least 30 mins.

  2. While everything is soaking, place the coconut oil, protein powder, cacao powder into a powerful food processor and blend until it forms a smooth paste.

  3. Pour the buckwheat and cashew mix into a strainer and remove all excess water.

  4. Remove paste from food processor and place drained buckwheat, cashews and sultanas and blend on high for 2-3 mins until mixture is combined. (It will be quite thick and sticky, that's what we want ;) )

  5. Add the coconut oil chocolate paste back in and keep blending for another 2-3 mins.

  6. Line a small baking tray with glad wrap or baking paper and pour some desiccated coconut into the bottom.

  7. Spoon the mixture into the tray and spread as best you can. 

  8. Coat the top with more coconut and fresh down with a spoon or fork, pressing the coconut into the mixture.

  9. Allow to set in the fridge, then slice into small bite size chunks.
