CHOCOLATE NUTTY PROTEIN SLICE

Whether it’s out of the fridge, cupboard or straight from the Thermomix, any way you eat this, it is guaranteed to leave you wanting more!

INGREDIENTS: (MADE 15 LARGE SLICES)

300G CASHEWS
150G CRUSHED WALNUTS
60G PEPITAS
60G SUNFLOWER SEEDS
100G SULTANAS
60G INCA BERRIES
100G CHOCOLATE ESA PROTEIN
4TBSP CACAO POWDER
180G COCONUT OIL
2 TBSP COCONUT NECTAR

METHOD:

1. ADD ALL INGREDIENTS, EXCEPT COCONUT OIL AND NECTAR, INTO THERMOMIX OR FOOD PROCESSOR.
2. MIX ON A LOW TO MEDIUM SPEED TO COMBINE.
3. PULSE ON A HIGH SPEED TO COMBINE.
4. ADD COCONUT OIL AND COCONUT NECTAR AND MIX ON A MEDIUM TO HIGH SPEED, MAKING SURE NOT TO BLEND ALL INGREDIENTS INTO A FINE PASTE. KEEP IT CHUNKY!
5. LINE A BAKING TRAY WITH GLAD WRAP OR BAKING PAPER AND POUR MIXTURE IN.
6. SPREAD THE MIXTURE EVENLY ACROSS THE BASE OF THE TRAY.
7. PLACE INTO THE FRIDGE AND SLICE ONCE COOLED AND SET HARD.
