CHIA BANANA BREAD

This banana bread is totally guilt-free, healthy, and full of flavour!

Ingredients:
1 cup almond meal
1 cup chia meal
4 bananas mashed (browner the better)
1/2 cup desiccated coconut
4 organic free range eggs
1/4 cup organic coconut oil
1/4 cup organic almond milk
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp baking powder

Method:

Preheat oven to 160 degrees celsius.
Combine all of the ingredients in a large mixing bowl.
Mix well with a fork until a smooth mixture is achieved.
Line a cake tin or bread tin with baking paper and pour the mixture into the pan.
Bake at 160 for roughly 40-50 mins. Check occasionally from 35 mins onwards.
Remove from the tin, remove the baking paper and allow to cool on a cooling tray.
Slice thinly and eat as is, or lightly toast to reheat and serve with sliced banana and a drizzle of honey.
My favourite way to eat this is nice and thick with my favourite chocolate protein smoothie!
